Can you get any more British than gin and tea? This recipe is the perfect drink for your summer festivities.
Ingredients

30 ml Tara Distillery Gin
- 120 ml The Berry Tea Shop ‘No. 118 Summer Breeze’ Tea (see method for brewing instructions)
- 30 ml Pineapple puree (choose to buy fresh pineapple if in season, or tinned pineapple is also fine - see method for how to make puree)
- 15 ml Lemon Juice
- 10-15 ml Sugar Syrup
- Pineapple Wedge for garnish
- Mint sprig for garnish
- Tall glass (for cocktail)
- Large jug

Teapot with infuser or Jug and Strainer
- Stirrer
- Ice (normal ice is fine)

Directions
24 hours prior - Cold brew the tea
- Add 1 teaspoon of tea per 100 ml cold water (120 ml makes approx. 1 drink)
- Infuse in the fridge overnight
- Strain into a jug or teapot
To make the pineapple puree, add pineapple (fresh or tinned) into a blender. Blend until smooth with no lumps.
To make the cocktail:
- Add all ingredients (Gin, Tea, Pineapple Puree, Lemon Juice, Sugar Syrup) except garnishes, into a tall glass
- Top with ice
- Muddle all ingredients until mixed and chilled
- Garnish with a pineapple wedge and mint sprig
- Enjoy!
